Due to decades of war in South Sudan, entire generations have not had the opportunity to gain an education. Nearly 80% of Southern Sudanese cannot read or write. Empanadas – or deep fried pockets of meat or vegetables – are a very popular dish is Bolivia. So, as part of a savings group meeting, Sara and Eva Mamani, group trainers, teach the members how to make these tasty treats. With their new skills, some women have started empanada businesses in their neighborhoods. And, as part of the teaching, Eva includes short lessons on the meaning of work, how one might market their products and how to determine prices for the empanadas. In Bolivia, it costs $20 for the ingredients to make 150 empanadas.
